With the start of Passover just a day away and nothing prepared for dessert, we wanted to make a super quick recipe! We of course reached for the holiday staple, matzah and used what we could find in our fridge. We ended up with a sweet matzah dessert, a twist on the classic favorite, s’mores. Check it out below:
2 sheets Matzah
2 cups salted mixed nuts
2 cups semi-sweet chocolate chips
1 cup shredded coconut
14 ounces vegen sweetened condensed milk (recipe below)
Preheat the oven to 350 degrees F. Line a 9x13 inch glass pan with parchment and spray with cooking spray. Place the matzo in an even layer on the bottom of the pan. Sprinkle over the mixed nuts, chocolate chips and half the coconut. Drizzle the sweetened condensed milk evenly on top. Sprinkle with the remaining coconut. Bake for 20-25 minutes or until the top is just lightly golden brown. Watch closely towards the end of cooking to make sure the coconut does not burn. Remove and allow to cool at least 45 minutes before cutting. Cut into bars and serve at room temperature. Store in an airtight container for up to 1 week at room temp or in the fridge. Makes about 15-18 bars.

Easiest Vegan Sweetened Condensed Milk
3/4 cup shredded coconut water
1 1/2 cups water
2/3 sweetener (stevia or xylitol)
1/2 teaspoon vanilla extract
3 tablespoon coconut oil
Grind coconut as fine as possible in a blender or spice grinder. Add about 3/4 cup water and blend well for about 1 minute. Add the remaining amount of water, sweetener, vanilla and salt. Blend well. Store any excess in a closed container in your refrigerator.
